Executive Sous Chef Ridgewells is seeking an Executive Sous Chef that is creative, has great vision and a passion for cooking, who will be responsible primarily for creating innovative and authentic menus, and executing client menu tastings. Responsibilities include, assisting in the management of its high quality/upscale production kitchen, assuring that foods within departments are prepared in an organized, efficient and timely manner, implements presentation techniques and quality standards, providing hands-on assistance, assisting the Executive Chef in preparation of budgets, payroll management, and food cost controls. Other duties include, Events Kitchen Management, participating in the training of Event Designers and kitchen staff, maintaining recipe standards to ensure that food is produced to specification, scheduling kitchen employees to maximize efficiency and meet labor budgetary guidelines, maintaining food costs controls and other records and implementing company policies within food production departments. Applicant should have a degree from an accredited culinary program, exhibit superior cooking, knowledge of molecular gastronomy is a plus, at least five years of proven management record in fine dining/upscale business establishments, strong interpersonal relations, the ability to organize and prioritize work to meet deadlines, and computer skills.
Pastry Chef The Pastry Chef’s primary responsibilities are to create innovative and authentic cakes, pastries, cookies, pies, cream icings, mousses, plated desserts, sorbets, chocolates, petite fours and sugar working, inventory, and cost control. Additional responsibilities include leading and directing the work of other pastry associates, accurate recipes that include portion sizes, pricing and costing, and collaboration with Executive Chef and Event Designers in planning and creating new pastries and desserts. Requirements: Culinary School Diploma or Approved Apprenticeship, extensive knowledge and technique of the pastry arts both traditional and modern. Ideal candidate will have at least 5 years experience with increasing levels of responsibility in a fine dining environment. Strong work ethic, excellent communication and organizational skills are required. Sous Chef We are seeking an experienced Sous Chef to run a new high profile cafe project at Arena Stage. Individual will be responsible for supervising, participating, coordinating, directing and administering all phases of the food preparation and onsite service in order to maximize profit and maintain high standards and quality. The Sous Chef is responsible for ensuring that all food items are well prepared with regards to quality, consistency, eye appeal and taste. Applicant should have a strong cooking background, at least 5 years experience with increasing levels of responsibility in a fine dining environment, strong interpersonal skills and the ability to organize and prioritize work to meet service schedules. Individual will be expected to work in a “hands on” role alongside the staff. Also needed are kitchen management skills in inventory, cost and quality control, hiring and training. We are seeking an experienced manager to lead and run a new high profile café at Arena Stage. Ensures that the café operates efficiently and profitably. Creates and maintains a positive and professional work environment. The successful candidate should be a highly motivated professional, with proven ability to establish excellent working relationships with various team members. Maintain excellent relationships with the client and their guests. Operates within the budget and identifies new ways to improve the development of the business. Carries out training and development of all staff to enable them to carry out their own duties and responsibilities. Participates in employee meetings, reviews and development. Ensures compliance with proper sanitation and cleaning standards. Hires, trains and schedules staff and is actively involved in the development of existing associates in service techniques, menu presentation, policies, and procedures. Menu development and marketing functions as they relate to the café. Performs related duties and special projects as assigned. Director of Sales Ridgewells is seeking a Director for Sales to oversee the management, budget, operations and business development of the Sales Department and work on a consistent basis with the Sales Team to generate new business and maintain contact with present accounts. Other responsibilities include, developing sales strategies by identifying customers current and future needs, establishing sales development goals and objectives with the CEO, generating sales by identifying potential clients, establishing relationships and sites, maintaining relations with customers by organizing and developing specific customer-relations programs, and participating in local social events. Candidate should have twelve to fifteen years of professional/food service sales experience, including a minimum of ten years managing a sales team, strong management, organization, sales, problem solving and communication skills and a Bachelors Degree in Business Administration, Marketing or related field. Sales Associate Ridgewells is seeking a Sales Associate to support its Major Events Team. Responsibilities will include providing administrative support, answering the phones, communicating with clients and vendors, handling and coordinating logistics for major events, and attending meetings and events with the Director of Major Events as required. Individual will also be responsible for entering events and sales information into event software, organizing and tracking client information, and assisting with event follow-through to ensure event changes and emergencies are addressed. Experience in sales, event services or catering is a plus. Applicant should be proficient in Excel and MS Office Suite and be able to use office equipment such as fax machines, copiers and multi-extension telephone system. Applicant should also be able to compose and type office correspondence, type a minimum of 40 wpm, and learn how to use Visual Synergy events software. Applicant should be able to learn quickly, interact well with others as a team, pay close attention to detail, and handle all responsibilities and remain organized. Applicant should also have a flexible schedule, be reliable and punctual, and be able to work some Saturdays and work over-time when necessary. Account Manager Ridgewells is seeking an Account Manager for its Major Events Division who will be responsible for servicing existing and potential client accounts for all hospitality events. Responsibilities will include developing and providing product and service information to customers, understanding and identifying customer needs, and preparing and presenting proposals and contracts to customers. Other duties include, resolving product and/or service problems in a professional and efficient manner, and acting as liaison between customers and various departments to ensure that orders and event contracts are fulfilled. Bachelor’s degree in Hospitality Management or related field is desirable, or equivalent education or experience; and at least two (2) years experience in sales, customer service, or catering and event management. Applicant should have effective communication skills, a pleasant and helpful personality, and knowledge of food, equipment and event management. Proficient in MS Office and ability to learn new programs. Must be willing to travel.
