Executive Pastry Chef

 

Ridgewells Catering is seeking a seasoned, hands-on Executive Pastry Chef to manage a high-quality, high-volume bakery division with innovation, creativity, teamwork and leadership.

 

Responsibilities:

  • Lead and manage a team to produce consistent, high-quality products; maintain quality standards for the bakery team with special attention to look, color, texture and taste
  • Develop new, innovative bakery concepts and participate in menu planning, working closely with the Executive Chef, Director of Sales and sales team
  • Prepare and manage department budget; ensure established food production schedules are met by effectively managing employees to maximize productivity and meet labor budgets
  • Conduct monthly inventory and institute inventory control procedures, working with the purchasing team regularly, to control food costs and ensure food product needed for daily production is readily available
  • Maintain recipe standards; responsible for database management related to recipes to ensure accurate costs and efficient production
  • Assist with/or personally execute client menu tastings
  • Participate in the training of bakery employees and entire staff practices safe and sanitary food handling procedures per HAACP and ServSafe guidelines

Qualifications:

 

  • Bachelor’s degree in Culinary arts , or related field
  • At least 5 years of management experience
  • Work experience in high-end off premise/banquet catering or in a high-quality, high-volume, multi-unit operation
  • Ability to create specialty cakes and showpiece construction
  • Strong pastry and culinary background/knowledge
  • Ability to lead and manage a team effectively
  • Strong verbal and written communication, and employee-relation skills – Spanish speaking is a plus

Executive Chef, Major Events

 

Ridgewells Catering is seeking an Executive Chef to join the Major Events team to manage, direct and oversee all culinary aspects of the catering and concessions operations for major golf championship accounts.

 

RESPONSIBILITIES:

  • Responsible for menu development, recipe development and standards, budget preparation and cost controls, product sourcing, food production and finishing, and payroll management
  • Ensure all menu items are prepared in an organized, efficient and timely manner with consistently high sanitation standards
  • Ensure established food production schedules are met by effectively managing employees to maximize productivity and meet labor budgets; assess labor needs on site with the ability to make on-the-fly adjustments to ramp up/down production as needed and within budget
  • Responsible for database management (CaterXpert) related to recipes to ensure accurate costs and efficient production
  • Work closely with the sales team to plan and execute client menu tastings, develop training material for traveling and locally hired culinary event staff on site, and handle last minute and special requests
  • Participate in the training of on-site culinary employees and ensure entire staff practices safe and sanitary food handling procedures per HAACP and ServSafe guidelines as well as the execution of any other market-specific health department requirements

QUALIFICATIONS:

  • Degree from a post-secondary culinary arts training institute
  • At least five (5) years catering experience with a proven management record; ability to lead, train and motivate others

Event Designer

Ridgewells Catering, Washington DC’s go-to caterer for stunning events and culinary innovation, is seeking an Event Designer to join its Sales Team. This position requires strong planning and organizational skills, along with a creative eye for fresh trends in event design and culinary activations, and prior experience reaching sales goals and objectives. Event Designers are the backbone of our Sales Team, and are dedicated team players and brand ambassadors. Responsibilities will include:

  • Planning, designing, and executing innovative corporate and social events to deliver exceptional and unconventional guest experiences.
  • Presenting proposals that “Wow!” in response to each client’s vision and budget.
  • Collaborating with our culinary team to develop fresh and inspired customized menus to match each client’s unique event.

Account Manager, Major Events

 

Ridgewells Catering is seeking a highly motivated, experienced professional to join our Major Events team as an Account Manager. This multifaceted position primarily focuses on sales and client relations for United States Golf Association championship accounts, but also has a hand in overall operations.

RESPONSIBILITIES

  • Manage a portfolio of assigned, high-end corporate clients
  • Create strategic client-facing materials and training documents and presentations
  • Create customized menus to match each client’s budget and needs
  • Design individual service plans for each client inclusive of staffing levels and equipment needs
  • Coordinate all internal tastings with various departments
  • Serve as the liaison between our clients and the rest of the team to ensure a flawless experience
  • Use catering software to manage client info and place client orders

Long-Term Intern, Major Events

 

Ridgewells Catering is seeking three (3) long-term interns to support our Major Events team. This is an exciting opportunity to gain professional experience in the hospitality and sports industry, working on large-scale catering and concessions operations at major golf championships.

WHAT TO EXPECT

  • You will work as part of our team to service our contract with the United States Golf Association
  • You will have administrative duties as well as leadership opportunities at your assigned championship(s); our work environment is fast-paced and ever-changing
  • You will work with all departments within the Major Events division (sales, culinary, purchasing, operations and staffing)
  • You will work 40 hours a week, Monday – Friday; however, hours may increase as we get closer and weekend work will be required during the championship

 

INTERNSHIP OBJECTIVES

This position would lead the team that is responsible for servicing over 100 on-site conference rooms which would include on-site catering and logistics.
